Scribble Press looks like a fun and easy way to create books with kids! I played around with it for awhile (sorry no examples to share with you :) and found it extremely kid-friendly. It offers students the chance to write their own story OR use a Mad-Libs/fill in the blank format (including a back to school story). Students can share the book electronically or send it in to be made into a real book (this costs money). Looks like a good student publishing opportunity!
